An acid is a substance that releases hydrogen ions, H⁺, when it dissolves in water. Strong acids such as hydrochloric acid () and sulfuric acid () ionize almost completely, so their solutions hold many free H⁺ ions; weak acids such as the acetic acid in vinegar ionize only partly. Acids taste sour, turn blue litmus red, and sit below pH 7. Citric acid in lemon and tamarind, and lactic acid in curd, are everyday acids.
